the cake archives: whipped ganache cakes

Our London Fog birthday cake was one of the first whipped ganache cakes we ever made. During COVID, we added cakes onto our menu, with the hopes that it would be enough to sustain our business. Lucky for us, our cakes were a hit. 

After we moved to Los Angeles, we began adding more to our cake menu. To this day, it is one of our most popular cakes - our Chocolate Salted Caramel Black Sesame Cake. 

We still have this flavor combination on our menu as one of our signature mousse cakes. 

Eventually, we added whipped ganache bento cakes which even became part of brand campaigns. 

All our wedding cakes to this date have been made with our whipped ganaches. Though finicky for travel and traditional serving, we're so happy to have been part of so many celebrations. 

Unfortunately with out of control inflation and exponential increases in the price of chocolate (and the fact that we use Valrhona), it no longer became sustainable for us to continue to make these cakes. We will miss you, whipped ganache cakes. :(
